Sultry Sweet Potato Latkes
Taking the classic potato pancake and creating a fresh healthy alternative by substituting with sweet potatoes. Top with your favorite flavor such as sour cream, applesauce or cheese for the ultimate accompaniment to any main dish.
- 1 lb sweet potatoes
- 2 scallions
- 2 eggs
- 1/3 cup flour
- 4 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
Wash & Peel Sweet Potatoes
Grate or shred Sweet Potatoes into finely thin ribbons
In a bowl, mix the sweet potatoes, flour, scallions, eggs, salt and pepper.
Heat oil in a non-stick pan over medium heat
Spoon 1/8 cup of the sweet potato mixture into the oil and flatten into a round pancake
Reduce heat and cook for about 1 1/2 minutes on each side until golden brown.
Serve with your favorite apple sauce or sour cream and sprinkle with onion flakes.
